Healthy-Gluten-Free Cookies

For those of you with Gluten Intolerance, here’s a nice cookie which is also good for your heart. There are a number of options, so do what seems right for you.


– 2 1/2 cups almond meal (Traders Joes is cheap compared to many places)

– 2 eggs (you can substitute egg whites or egg substitute.)

– 3/4 cup sugar (You can also use Sugar Substitute like Sugar Twin)

– Add whatever spices and/or cocoa you’d like to try.
They almost taste like brownies with the cocoa added.

– Cook at 350 degrees for 25 minutes
